But, a gas grill is so much more convenient. If you have a gas grill, but want some of that charcoal-grilled flavor, you can add soaked flavored wood chips to a smoker box or foil pouch with holes and sit it directly over the flames.</p>
<p>&#13;Fire Starter</p>
<p>&#13;Although charcoal grills produce incredible-tasting food, it can be a bit frustrating trying to light the coals. Most people either use easy-lighting charcoal, or douse the charcoal with lighter fluid. What you have to remember is that you have to allow time for the lighter fluid to burn off before putting your food on the grill or your food could have an unpleasant lighter fluid taste.</p>
<p>&#13;An easy way to eliminate lighter fluid is to use either a grill chimney or electric charcoal starter. A grill chimney is one grill accessory you shouldn&#8217;t be without. It&#8217;s a metal container which allows you to light the briquettes outside of the grill with no fluid, and then transfer the briquettes to the grill when they&#8217;re ready. Another option is an electric charcoal starter, which are like big prongs you plug in and stick in with your coals while inside the grill. The electric coil heats up the coals, starting them on fire. You do need to have an electrical outlet handy, but it works pretty well.</p>

<p>In this video, Betty (with the help of her husband, Rick) demonstrates how to make Grilled Salmon Steaks with Herb Butter. These are thick salmon steaks, cooked on the outdoor grill. Rick and I are trying to do quite a bit of grilling outdoors while the weather is still nice. During the winter I will be using an electric kitchen grill or broiler pan in the oven (unless Rick volunteers to go outside in the cold to grill something!). Ingredients: (4) 1-inch salmon steaks (We left the skin on, so that the flaky salmon would not fall apart when done. You may remove the skin before or after grilling, or serve the salmon with the skin on.) 1/4 cup butter, softened 1 tablespoon chopped fresh tarragon (You may use dried herbs for any of these herbs; just use 1/3 as much.) 1 tablespoon chopped fresh chives 1 ½ teaspoons chopped fresh parsley 1 tablespoon Dijon mustard (You may substitute a different kind of prepared mustard here.) freshly ground black pepper, to taste 1 green onion, finely sliced In a small bowl, combine 1 tablespoon chopped fresh tarragon, 1 tablespoon chopped fresh chives, 1 ½ teaspoons chopped fresh parsley, 1 tablespoon Dijon mustard, some freshly ground black pepper, and 1 finely sliced green onion. Brush each of the 4 salmon steaks with the butter mixture, particularly on all parts with no skin. Grill salmon, uncovered, over 350 to 400 degree heat, until salmon flakes easily with a fork. This may take up to 8 minutes per side, but just watch carefully <b>&#8230;</b></p>

To complete this How-To you will need: A grill A steel brush A clean cloth Vegetable oil Peaches Sugar Lemon juice Ice cream or whipped cream Step 1: Clean the grill Clean the grill so the fruit doesn&#8217;t stick. For a charcoal grill, light some coals; with a gas grill, set it on high and close the lid. After about 20 minutes, let the grill cool. Then scrape off the burnt-on bits with a steel brush, and end by wiping down the grill with a clean cloth soaked in vegetable oil. Step 2: Heat the grill Heat a gas or electric grill to medium. If it&#8217;s a charcoal grill, wait until the coals are ash-colored. Step 3: Prepare the peaches Wash the peaches, cut them in half, and remove their pits. Tip: All stone fruits do well on the grill, so consider grilling nectarines and apricots as well. Step 4: Coat the peaches Toss the peach halves in a mixture of about two parts sugar to one part lemon juice until they&#8217;re fully coated.
